Bream/Cod/ sturgeon are not bad at all, but you have to go to specific spots for Sturgeon for example, I got those all on first day. There are a few youtube videos showing exactly where to go. Try google "Assassin's Creed Valhalla All Fish Locations" and "Assassin's Creed Valhalla Big Fish" - following the written guides and youtube, I got everything except for 3 Big fish that seem bugged, no Big flatfish, Big Eel or Big mackerel yet for me, but it does seem a few rare people have gotten them. This game is very buggy a lot of people are stopping fishing until the next patch.
Another trick I read in wrtten guide to get fish to show up is go to Inventory page, then in lower right, select Animus, Exit animus, then re-enter animus, that might make fish appear (especially in a spot where you here Eivor say Lot's of fish here or it's boiling with fish).
It's not a bug, it's a feature. Simply go East to the edge of the Afon river, then travel along the river bank south until you find all dead bodies of Ubba's soldiers and read the letter there. It's not that far south so doesn't take long to find it. Eivor speaks aloud that this is the spot Alfred mentioned and after looting bodies and walking around a little, she says she needs to talk to Hytham back at the settlement. After she says that, Fast Travel works again. They want you to find this camp before leaving the area which is why they turned off Fast Travel. I suspect it's the same for other times in the story. If you lost fast travel, it means you need to roam around the whole area until you find what they want you to find, then fast travel will work again. I discovered the camp by accident because I took my horse to ride south to get to last spot of my long boat, when I was then going to try to take back to the settlement since Fast travel was broken. I suspect that Ubi thought other people would do this too since Fast travel was purposely locked out until you did this. I wish I had paid more attention when Alfred was talking but I was distracted by a movie I was watching.
I tried to find a youtube to see if I could watch his speech to me again to get a clue of why I was stuck there with no fast travel, but there is none presently on youtube of the Aethelny thing so it was pure luck I traveled on river bank to the south a little.

My bug issue is a little different. I can [E] interact with the dead men to start the fight. Once the open cut-scene finished, and boss runs to me knocks me to ground, and then I can not get up, I can not move, I can't use abilities, none of the keys I press do anything, I can't do anything. I can't fight so I just stay on ground, while boss continues to hit me over and over until I die, I'm just stuck. The H button does work because when I get lower health I can press H to restore health, while boss continues to just hit me over and over while I stay stuck on ground until I have no health rations anymore and die. This has repeated multiple times on both bosses Goneril and Cordelia. I have not tried the Regan boss yet.
Things I have tried but none worked:
(1) Rebooted game many times, closed other apps running, rebooted my PC (windows 10 64bit, GeForce rtx 2070 Super gpu). gpu drivers are fully updated.
(2) reset game settings to default.
(3) Left zone and returned, went to different zones and returned, I also went to sleep in my bed in Raventhorne and returned.
(4) Tried starting the game from different software both the UBI launcher, and the Geoforce Experience game starter.
(5) Went to Inventory and in lower right of screen selected to Exit Animus, then returned to Animus (because this is something fisher people are trying to get fish to appear since fish are also bugged).
(6) I am at skill level 400, with many master points at this point.
(7) I have not finished all the mysteries quests in the zones of the daughters. How would I get a list for you of the quests/mysteries completed for the zone? I finished all Vinland quests, I think I finished all main quest but I don't know how to tell. Currently about 99% done Jotunheim quests, but since I went back to Ravensthorpe, it says my current quest is Bound to Fate (return to asgard), I waited a long time to do asgard line of quests.

good to know, all I know is I was also stuck after meeting Alfred in the village. no fast travel, but as soon as I went to the camp on the river bank that Alfred had mentioned in his talk to me, and I looked around and Eivor did some out loud talking, then Fast travel worked again.
