    There's no way to know, and they are often a higher level that whatever area they are in. The only way to know what level they are is to start the fight and then either just give up or die trying to fight them. I'm on very hard mode so naturally I can't hope to beat a level 360 boss at level 188. It just feels dumb for Eivor to walk up to the corpse and then walk away without interacting. It should be possible for me to see the level of the boss as soon as its revealed on the map.
    This would also help for when you need to leave it for a while and level up a bit, so you can check back what level it is if you've forgotten. It would mean less ridiculous immersion breaking googling. And there's no clear source of information, just a bunch of articles with unreliable information that is often wrong.
