Multiple bugs when fishing on XBox Series X

While playing on XBox Series X I've come across multiple bugs when fishing.
- All big fish appear to swim on their sides in the water.
- Once hooked all fish, regardless of size, appear to swim on their sides.
- When catching fish from a small boat there are times when the fish passes though the boat or even through Eivor but the catching animation does not trigger.
- The animation for all fish captures has Eivor acting it out but the fish do not appear in her hands.
- All fish along the eastern coastal region disappear as soon as I fast travel to that point. This is especially true for Folcanstan where the Bream and Big Sturgeon are said to spawn.
- Big Flatfish are no where to be found.
- All Salmon have the look of Grey Trout.
I would love to finish the Swordfish challenge but this game won't allow me to.
187+ hours of game time. I will add to this if I come across anymore. -
