[QUESTION] Minimum stock air transport goods

Is it possible to set a minimum stock level on Air Transport Goods / Mail?

There is no way, to set a minimum for mail. The reason is that there is no storage building, like a warehouse or trading post, where the mail is "stored" and you can set the minimum like you can for normal goods. Now, I'm not saying that I like this; I don't. I think it is absolutely essential that you can set a minimum to stop the airships that collect regional and overseas mail from taking all available mail and thus having none left for Local mail.
The mail system is still messed up. Although there are statistics available on how much you make and use, it's still very difficult to balance. I've yet to build a big city in the New World (Manola island) but I still doubt very much that you can make enough surplus mail in the New World to get anywhere near satisfying Crown Falls need for Overseas mail.
Not sure what you mean by Air Transport goods. For anything other than mail, you just set the minimum in the usual way if you happen to be using an airship for a trade route, but I'm sure you know that. -

You can see here, that mail is stored on island and is classified as Air Transport Good.

I agree that mail is "stored". However, there is no physical building like a warehouse, trading post, or oil harbour where you can set a slider like you can for all other goods. I think it is "stored" in either post offices or the airmail module, but there is no way to set the minimum. -
